Cooking Capers

For the love of making a mess, buying kitchen gadgets...and occassionally making something that tastes good.

I don't improvise many things...
- "eggs 'n stuff" - one of Mom's favorite recipes
- sushi :)
- popcorn (huh?)
- pizza

and...fried rice, based on a recipe in "Help! My Apartment has a Kitchen". I love my fried rice. It's not all that exciting to others, but for some reason, it has a special place in my heart. It's the ultimate (next to "eggs and stuff") for using up leftovers.

cold, left over rice - my favorite source is taking home restaurant leftovers
1 med yellow onion per 2 C rice
a T of soy sauce per cup of rice
an egg per cup of rice
sesame oil
frozen vegetable (peas!) ~quarter cup per 2 C rice
cooked meat (I like to keep frozen shrimp in the freezer) ~1cup per 2 C rice

Melt butter in a pan. Beat, then cook the eggs in butter. Don't stir the eggs or flip them. Set aside.
Roughly chop, then cook onion in peanut oil for 5 min or so until softened (you can use veggie oil too)
Add rice, soy sauce, frozen veggie, meat and stir around until mixed and rice is hot. Add more oil if rice sticks to pan.
Add more soy sauce if you want - I always do.
Stir in a few drops of sesame oil - I use toasted (a little goes a long way)
Cut up egg into strips and gently mix in.

Yummy!
